Since your blueberries are locally grown in the Comox Valley on Vancouver Island, they carry that distinct coastal sweetness that makes for an incredible dressing. Using freeze-dried berries allows you to capture that peak-season flavor all year round.

The Recipe

This vinaigrette is vibrant, slightly creamy due to the berry solids, and perfectly balanced.

Ingredients:

  • 1/4 cup VI Sweets Freeze-Dried Blueberries (pulverized into a fine powder)

  • 1/2 cup Extra virgin olive oil

  • 3 tbsp Apple cider vinegar (or white balsamic)

  • 1 tbsp Local Comox Valley honey

  • 1 tsp Dijon mustard

  • Salt and pepper to taste

Instructions:

  1. Crush: Place the freeze-dried blueberries in a sealed bag and crush with a rolling pin, or use a spice grinder until you have a fine powder.

  2. Whisk: In a small bowl, whisk together the vinegar, honey, mustard, and blueberry powder.

  3. Emulsify: Slowly drizzle in the olive oil while whisking constantly until the dressing is thick and shimmering.
